I have the VholdR ContourHD, the worlds smallest HD helmet cam - http://www.vholdr.com - an excellent buy, they have released an new model, the ContourHD 1080p and the specs:
Full HD - 1080p (1920x1080)
Tall HD - 960p (1280x960)
Action HD - 720p (1280x720)
Contour HD - 720p (1280x720)
Fast SD - WVGA (848x480)
Personally I wouldn't choose anything else.
Retails on ebay for about $329(+/- R2500) + shipping

I have a Mini DV Cam and although it's been a lot of fun i think it's meant more as a spy cam than for cycling. It's great and really small but i've experienced some problems with batteries / charger and saving files in an odd way. I'm sending it back in the hope that i'll get one that works but will have to improve my spead to record most of the rides instead of just little bits.
Jason, what sort of recording time do you get out of your battery and how long can you record for before it has to be saved to stop the file getting too big?
Hey Guys,
I have the Countour HD 1080p and it is amazing. Picture quality is brilliant and, at 720p, you can set the frame rate to 60fps. makes the ride look much smoother than the regular 30fps. battery life is good and i reckon i could easily use it for 6hrs. Memory card is important, it comes with 2gb but i upped it to 4gb because it records at about 8min/gb in 720p 60fps mode.
Sound is a bit kak, but then again what camera isn't when you have the wind rushing past you. the sensitivity can be adjusted with the software on the pc.
Paid R2400 for mine and i am not looking back. just wished they added a fey extra mounts so i can get creative.
